“开售” is the abbreviation for “开始发售” ("starting the sale/start of the sale"), and we normally don't use that abbreviation.
“上市” means "available to the market". In most cases, “开始发售” has the same meaning as “上市” and are interchangeable.
eg. “最新的iPhone 将于明年开始发售！” is the same as “最新的iPhone 将于明年上市！”
("The latest iPhone will be available for purchase next year!")
However, as you probably can tell from their literal meanings, they can be different. For example, some retailers may decide to sell a new product before it is officially available to the public. In that case, “开始发售” doesn't equal to “上市”
eg. “这个产品的官方上市日期是4月1日，但是WowMart在3月31日就开始发售了。”
"This product should be officially available on April 1st, but WowMart started selling them on March 31st."
Besides, “上市” is also commonly used in the stock market context, while “开始发售” is usually less commonly used in the stock market context (but there is nothing wrong with using “开始发售” in the stock market context).
